Campania - *coppa (cooked) fiordilatte mozzarella, red onions & rocket 145

*Coppa – production begins with a whole cut of pork that is generously rubbed with salt and left to dry cure for several weeks to a month or more. It is then seasoned with paprika, pepper, garlic and other spices.
When finished the coppa becomes homogenous with a deep red colour coming from peppers and paprika used. It will have a similar texture to Parma ham that is tender with fatty textures throughout.
